1 tablespoon cold-pressed virgin olive oil
1 tablespoon honey (or 1/2 teaspoon of Nature Sweet Sugar Substitute)
1 heaped tablespoon finely chopped fresh oregano
1 heaped tablespoon finely chopped fresh tarragon
1 heaped tablespoon finely chopped fresh basil plus extra for garnish
1 red onion sliced
4 spring onions
2 cups cherry tomatoes (red or yellow)
2 tablespoons Vinaigrette (page 100)

Heat the oil, stir in sweetener and herbs, add onion slices and increase heat to brown the onions, stirring constantly.
Lower heat when onions are coloured and add tomatoes, stir gently for about 2 minutes.
Try to keep the tomatoes whole.
Serve warm sprinkled with the Vinaigrette and extra chopped basil.
